It is almost time for Spring to put in an appearance now and then before she decides to stay for a lengthy, anticipated visit. I want to have a small garden in my back yard this year, a far cry from the gardens I planted when I was raising my kids. It was such fun to go out the back door with an empty basket, only to return with a basket overflowing with tomatoes, squash and peppers.
All winter I have made a run to Kroger to get a few squash when I felt the need for a good old country dinner of fried squash, potatoes, beans and buttery cornbread. Just think, before long I can walk out the door and bring them in from my own back yard! I love standing in the sunlight plucking a ripe tomato, wiping it on my shirt and eating it right then and there. I remember doing that as a child and breaking the long stem from an onion to use as a straw for tea in the hot afternoons. My own children learned to do the same thing.
I found a great recipe for pound cake made with cake mix that I just have to try. If it is as good as it sounds I will have to share it with you. I have always loved to cook. I enjoy the challenge of making a fantastic meal from almost nothing. I swear I read a cook book like some people read a novel! I tuck one in my purse when I go anywhere that I might have to wait. I have gotten some strange looks in my doctor's office when I whipped out a dog eared cookbook from my purse!
